After doing some research, I noticed that most of the older methods people used no longer work. I came across this guide: baidulinkdownloader.com/resources/baidu/how-to-download-from-baidu-without-account and decided to give it a try. I was able to download without issues, though my files were mostly small (under 50MB). Hopefully it helps someone else too.

I think third party services like baidu erranium, baidu kinh are just easier to use and most provide a free download quota of upto 1gb which is adequate for most asset downloads.
